Two el-cheapo and delicious tomato paste recipes that will surprise you

#1 - tomato sauce: mix 6 oz tomato paste with 1 1/2 cups water. Add 2 tsp sugar, salt and pepper to taste, 1 tsp Italian seasoning (or seasonings to taste). Separately mix 1/2 cup water with 4 TB cornstarch until it is dissolved. Stir into the tomato paste mixture. Stir and heat over med high heat until it thickens. Voila - cheap tomato sauce. You can add ingredients as you can afford them to make it meaty, chunky, etc. But it is still very good plain.

#2 - tomato juice: Put one 6 oz can tomato paste in a quart jar with 3 cups of water and 1 tsp each salt and sugar (may adjust to taste). Shake well, chill overnight. Tastes best well chilled. Also excellent with celery salt used instead of the regular salt.
