Recipe Name: Dill potato salad
5 pounds potatoes
bunch of green onions
3/4 to 1 cup mayonnaise
1 tablespoon mustard
2 tablespoons Italian parsley (only the leaves chopped)
2 tablespoon fresh dill (1 if dill is dried)
2-3 celery stalks chopped
Salt and pepper to taste
Recipe Instructions: boil the potatoes in salted water. Boil the eggs and then chop them up along with the celery. Once the potatoes are cooked dice them Place potatoes and eggs and celery in a bowl. Mix all the ingredients with mayonnaise, mustard, dill and Italian parsley.
Add salt and pepper to taste add 2/3 of chopped green onions (keep some for decoration) mix well.
Refrigerate until well chilled.
Serve in a decorative bowl, sprinkle reserved green onions on top. Enjoy If potato salad seems a little too dry add more mayonnaise before serving and mix well.

I love, love, love this recipe. I first tried it at a friend’s house and couldn’t get enough. Everyone was raving about it and asking for the recipe.
It is so simple to make and will last in the fridge for several days and can be used in a salad, with a bbq or even in a bap roll with some lettuce.
I even like to eat a small bowl of this for an afternoon snack sometimes but I do have to make sure I don’t eat too much as it is rather calorie high with the potatoes and mayonnaise. I do use low fat mayonnaise to try and cut down the fat content.
I like your last comment about it looking and smelling great because it really does and really does wow at parties. This recipe really is worth adding to your cooking repertoire.
