Substitute Cooking Ingredients

Knowing
what substitute cooking ingredients you can use when you're in the middle
of preparing dinner and either realise that (A) you haven't got a vital
ingredient or (B) you just don't have enough of it to feed everyone,
could be a real life saver.
To save those embarrassed faces and awkward situations I thought it would be handy to provide you with a list of emergency ingredients and also how you can make your meals go further with other food stretchers.

| Baking Powder 1tsp | 1/4tsp bicarbonate of soda, plus 1/2tsp cream of tartar, plus 1/2 tsp ground rice. Sift together | |
| Beer | Ginger Ale, lemonade, tonic water | |
| Bolognese Sauce | Extra meat, shellfish, vegetables, olives, Soya granules | |
| Bread Crumbs (for coatings) | Crushed cornflakes or water biscuits | |
| Self raising flower 4oz | 40z plain flour, plus 1 level tsp baking powder. sift together | |
| Chicken | Onion, celery, rice , pasta | |
| Chilli | Bulgur, beans, rice, spaghetti, sweet corn | |
| Corn flour 1tbsp (as thickener) | 2 level tbsp plain flour | |
| Cream single 1/2 pint | 225ml milk plus 60ml melted unsalted butter | |
| Creamed corn | Milk or stock and onion (for soup) | |
| Fish | cut up and stir fry with vegetables or mix with spicy rice | |
| fruit juice | soda water, mineral water | |
| Gravy | Condensed tinned soup or packet soup made with half quantity of water | Pureed vegetables, tomato sauce, mushrooms |
| Green Pepper | red or yellow peppers | stuffing of rice |
| Minced beef | minced pork or lamb | Grated courgette, carrot pr marrow, rice pasta, onion, green pepper, lentils |
| Honey 225ml | 225g sugar plus 4tbsp water or golden syrup | |
| Ice cream | Frozen Yoghurt | Fruit, sauce, cereal topping |
| Lemon Juice 1tsp | 1/2tsp vinegar, limejuice | |
| Milk whole 1/2pt | 1/2pt skimmed milk plus 3tsp melted butter | Instant dried milk |
| Noodles | Spaghetti | |
| Sour cream | natural yoghurt | |
| Steak | Dice and stir fry with vegetables | |
| Sauce tartar 115ml | 7tbsp mayonnaise plus 2tbsp chopped sweet mixed pickles | |
| Tomato sauce 285ml | Condensed tomato soup or packet of soup made with half the water. | Carrots, broccoli, celery, green pepper, olives |
