Lentil Bolognese Recipe

Lentil Bolognese 
frugal Recipes - Ingredients:

2-3/4 cups of water, plus add additional 1 cup if necessary. 
1 cup of brown or green lentils (rinsed & cleaned)
2 TBSP. olive oil
1 onion, finely chopped (1 & 1/4c.)

2 garlic cloves, crushed
1 carrot, finely chopped (3/4 c.)
1 celery stalk, finely chopped (3/4 c.)
1 28 oz. can tomatoes, drained & chopped
1/2 - 1 tsp. oregano
salt & pepper to taste.

Recipe Instructions

1. Bring water to boil in a large pot. Stir in the lentils & simmer,covered, for about 40 minutes, or until liquid is absorbed & lentils are soft.

2. In a medium sauce pan, heat the olive oil. Add onion, garlic, carrot & celery. Cook over low heat stirring occasionally. Stir in tomatoes & oregano. Season with salt & pepper to taste. Cover and simmer gently for 8 minutes.

3. Add water in pot to boil for spaghetti pasta. Cook pasta to your family's desired firmness. We prefer al dente.

4. Add the medium sauce pan contents (garlic, carrots etc..) to lentils & cook, stirring occasionally, until well combined & heated through.


Great frugal meal and you are providing your family with a nutricious meal high in protein (lentils).

This recipe can be doubled and frozen if you like.
