Vegetable Biriyani

Frugal recipes - You don't have to eat meat with every meal and if you are trying to save some money, buying less meat is a good option.

I enjoy a good curry but find the vegetables in the takeaway meals a little boring and tasteless. I find that using fresh thickly chopped vegetables a much tastier alternative.

Ingredients: serves 4

  • 7ml oil
  • 1 medium onion (chopped)
  • 1 inch ginger (peeled and chopped)
  • 2 cloves of garlic (chopped)
  • half teaspoon coriander powder
  • 1 tsp cumin powder
  • 1 tin chopped tomatoes
  • 1 half pounds mixed vegetables (diced fresh or frozen)
  • 3 cups of cold water
  • 6oz brown rice
  • Pepper to taste

 

Method

frugal recipesFry onion in oil until they soften

Add garlic and ginger and cook for a couple of minutes

Add rest of herbs and spices

Add tin of Tomatoes and cook for 5 minutes

Add vegetables, rice and the three cups of water.

Simmer until cooked.

(the rice can be cooked seperately if prefered.)
