Pea and Potato Cakes

Frugal recipes for the frugal cook.

I make these in bulk and keep them in the freezer. I then break them out whenever I make a curry as they make a nice little accomliment.

They are also good for parties as nice little finger food as they are lovely both hot and cold, especialy if they are dipped into chutneys.

Ingredients: (makes 3 large cakes, alter quanties for more)

  • 250g floury new potatoes
  • vegetable oil
  • 40g peas (frozen or fresh)
  • 2 pinches each of of Coriander, red chilli and cumin powder
  • salt to taste

Peel and grate potato, boil until cooked

Cook peas until cooked

Drain potatoes and squeeze water out of them, leave to chill in the fridge for 15 minutes.

Put oil in frying pan and add peas and herbs and spices. Cook for 1 minute and mash slightly

Divide the potato mixture into 6 balls, then flatten in palms of hands.

Divide the pea mixture into three and place each portion into the middle of one of the potato cakes. Now place other potato cake on top to sandwich mixture. Seal edges

Now brown off the cakes in the frying pan until golden brown.
