Frugal recipes - Easy Chicken and Pasta
Pasta and Chicken are two cheap ingredients which are both tasty and versatile as ingredients. They can also be bought in bulk and kept for some time which again helps to reduce the weekly food bills.
This recipe combines both ingredients in one simple and quick recipe and so must be one of the best frugal recipes available.
1 tbsp. olive oil
1 lb. skinless, boneless chicken, cut up
1/2 onion, chopped
1 stalk celery, chopped
1 garlic clove, minced
1 can cream of mushroom soup
2 1/4 cups water
1/2 tsp. basil
2 cups penne
Heat the oil in a pan and then add the chicken, onion, celery and garlic. Cook all the ingredients together stirring often to prevent burning, until browned.
Set chicken and veggie mix aside for awhile.
Now put soup, water and basil in a pan and heat until it boils. Add the uncooked pasta. Reduce the temperature to a medium heat and cook for 10 minutes.
Return the chicken and veggies to pan with the pasta mix and cook for a further 5 minutes.
Make sure everything is cooked to your taste and serve. You can sprinkle with Parmesan, if desired to add another texture and flavour to the meal.

This is such a simple recipe and so quick to make which for me is a big bonus as I don’t particularly like to cook. I just want to get in the kitchen cook and then get out as fast as possible.
I wish I did enjoy cooking more because I like to eat fresh all the time but this means that I do end up having to spend more time in the kitchen than I would like. Ah well with recipes like this at least I get to eat tasty food quickly.
