Frugal recipes - Beef and Barley Soup
Recipe Ingredients:
1 lb. beef, cut into small pieces
1 tsp. oil
2 med. carrots, cut up
1 med. onion, diced
2 stalks celery, cut up
1/2 cup frozen corn
2 med. potatoes, peeled and cubed
1 can tomatoes
6 cups beef broth
1 can beef gravy
1 can tomato paste
1 cup barley
1/4 tsp. dried thyme, dillweed and pepper
Recipe Instructions:
Brown beef in oil. Add rest of ingredients. Bring to boil. Cover and simmer for 1 1/2 hours.
Makes 6 servings
