Frugal Recipe BBQ chicken Nachos
I love nachos and this recipe sounds so fantastic. Whats not to like.
1 large can of chicken breast
1 bottle of favourite bbq sauce
1 bag of tortilla chips
1 8 oz package of shredded cheddar cheese
1 8 oz package of queso cheese
3 green onions (tops only)
2 Table spoons of sour cream
1/4 cup of lettuce shredded
1/4 cup of salsa
Preheat oven to 350 degrees. Mix the can of chicken and 1/2 cup of bbq sauce and set aside. Melt the queso cheese, until creamy.
Line a oven safe plate, or shallow baking dish with tortilla chips. Top chips with melted queso, chicken mixture, and shredded cheddar. Place in oven for 10 minutes.
Remove from the oven and top with shredded lettuce, and chopped spring onion tops. Drizzle the remaining bbq sauce over all. Top with 2 tablespoons of sour cream and salsa.

Wow this sounds good to me. I love nachos even though I know its not really a healthy meal that should be eaten too often but it’s great for occasional treat or for a garden bbq or family party.
Barbecues can be a little boring and predictable, you always end up eating burnt sausages and jacket potatoes. I often dread going to them with friends because I know I will end up eating the salad only.
Adding a dish like this will make your bbq a little bit different and I’m sure your family and friends will remember your party because it served something different.
I am a vegetarian and so I would substitute the chicken with quorn burgers chopped up into smaller pieces. It will taste just as great I think and my veggie friends will definitely want the recipe.
Roll on summer days and long warm evenings, party time.
