This cheese pie is similar to a cheese quich but is made with potatoes to create a more filling pie.
You can just buy some frozen pre made pastry if you wish but i quite like my pastry to be savory too and so making it yourself allows you to do this. It is also gives you the frugal opportunity of making more than you need and freezing it for another time.
The ingredients are easy to obtain and you may even find that you have most of them already, again proving itself to be great for a cheap recipe option.
This pie is great hot or cold, with vegetables or a salad. So a real all year round winner with the family.

Ingredients for savory pastry:
Cheese pie Filling ingredients
Begin by making the pastry.
Add to bowl sifted flour, mustard, salt and pepper, then rub in the margarine.
Add grated cheese and parsley
Add enough water to make a firm rolling pastry
Wrap the pastry in clingfilm and put in the fridge to chill
When chilled, roll out and line a 8 inch flan dish and cook for 15 minutes (gas mark 5 / 190c)
To make the filling:
Heat the margarine in a saucepan and then add chopped onions for 8 minutes.
Add the cooked dice potatoes nad mix together.
Use the mixture to fill pastry shell and top with the sliced Tomatoes.
Beat the eggs in a jug and add the milk, parsley and cheese and mix well togeather.
pour mixture over potatoe mix in pastry shell and bake for a further 25 minutes at gas mark 3 / 160c
The mixture should set during cooking and so can be sliced for serving.
