This recipe was given to me by my mother in law. She is an excellent cook and makes simple but tasty meals. I love making this homemade soup. It is very filling and perfect for those cold winter months.
Chop onion and sweat in butter until they go translucent
Grate carrots and add to onion and simmer
Peel and chop potato and add to onion and carrot
Add stock and cook for ten minutes or until potato and carrots are cooked. Season to taste.
Place mixture in blender and blend until smooth
Serve with fresh crusty bread. A little plain yoghurt or crème fresh can be stirred in for that little extra luxury.

Since posting this recipe I have experimented with all sorts of vegetables left over at the end of the week. I especially like the fact that I can use the stalk of my broccoli and the end of my cabbage to make a quick and easy soup. I like to spice them up with some chilli powder or Worcester sauce to give it that extra kick.
it has become a weekly ritual now that Friday night is soup night so that I get to use the last of my vegetables for the week. Its great I used to have to throw some things away as they started to go off. Now if the carrots are a little rubbery it doesn’t matter, or if the cabbage is a little yellow so what. Once its in the soup it tastes great and no one is any the wiser.
In the winter I will make it to go in my partners lunch pack so that he has something hot to eat during the day.
