Cheap recipes for the frugal cook.
This recipe is another that my mother in law gave me, it is similar to one my own mother used to make us. I will give you both versions.
Vegetable soup is definately one of my favourites during the winter months and I often make up large batches which I either freeze or which serves for a couple of meals or lunches throughout the week.

Frugal recipes -
Recipe one:
Ingredients:
Peel and chop vegetables.
Sweat onion in butter until they go translucent
Add carrot, swede and 1 pt vegetable stock. Cook for 10 minutes
Add potato and cook for a further 10 minutes or until all vegetables are cooked.
Season to taste.
Serve with fresh crusty bread.
Recipe two: Known in my house as Vegetable Stew (tin of stewing meat can be added if required)Ingredients: (this is to make a large amount which can be frozen in meal size portions.

method
Fill half of a large pot with water and bring to the boil
Peel and chop onion and pototo into large chunks and add to boiling water. Cook for 10 minutes
Add casserole veg, baked beans, tin of soup and a large tablespoon of gravy powder
Cook for another half an hour
I sometimes make dumplings to go into the stew which I add 5 or 10
minutes before serving.
