Cheap Recipes Vegetable Pasta Bake 

Cheap recipes for the frugal cook.

I love to eat this meal hot or cold, and it is good to make in all seasons.

The ingredients are cheap and the meal can be made to cater for a large family or spread over several days as either a main meal or as a side dish.

 

1 tin small sweetcorn

2 diced peppers (fresh or frozen)

2 carrots

Dried mixed herbs

1 tbst tomato puree

1 large onion

1 tin chopped tomatoes

1 large courgette (Zucchini)

1 tbsp vegetable oil

50g cheddar cheese

225g pasta (quills, fusilli which ever you prefer)

Peel and finely chop the onion and carrots. Chop courgette.

Fry all vegetables in oil until soft

Add tomatoes, mixed herbs and puree. Cook for 10 minutes (add water if necessary)

Cook pasta in boiling water (as per packet guidelines)

Mix cooked pasta and vegetables together and place into oven dish.

Cover with grated cheese and grill for 10 minutes until brown.

Serve with a green salad

What I like about this is recipe is that it can be so adaptable. You don’t have to use all of the ingredients if it is not to your taste or if you are cutting back on some of the more expensive vegetables such as peppers. It tastes great with all sorts of combinations of vegetables.

I also like to keep some for the next day as it becomes more solid over night in the fridge and this gives it a whole new taste and texture and is great for my lunch the next day. It is rally filling too, so you won’t have to snack in the afternoon, which is a god send as I am I trying to watch my weight. Sitting here at the computer all day does not do your waist much good.
