This pie is a little different as it doesn't require pastry and the topping is a mixture of breadcrumbs, cheese and nuts to give a lovely crunchy topping.
The ingredients are fairly simple and any well stocked cupboard should include many of the ingredients, so it won't cost a lot to make.
I serve this pie with lots of fresh steamed vegetables on the side with a little added gravy.
Frugal Recipes - Ingredients: (serves 4)
Chop potaoes and leeks into cubes
Boil potatoes until soft and steam the leeks until almost cooked.
Make sauce - mix flour and mustard with a little milk until smooth. then mix in the rest of milk and lemon rind, nutmeg, bayleaf and margarine. Bring to the boil and whilst continually stirring, simmer for 2 minutes.
Drain potatoes and mash until smooth
Remove bayleaf from sauce and add to the potatoes and leeks
Season with salt and pepper
Place mixture in a large baking dish or into 4 small gratin dishes.
Sprinkle the surface with the chopped nuts and grated cheese and cook in the oven (200c/400f/ gas mark 6) for 15 minutes until the mixture is warmed through and the topping is browned.
