Cheap recipes for the frugal cook.
This recipe can be either made as described or mince meat can be added to satisfy the meat eater if required.
The chilli can be eaten on its own or with bread, a green salad or rice. I don't like particularly hot or spicy food and so I make this quite mild, but make as spicy as you like. Taste it as you go along to achieve your desired level of hotness etc.
Tins of beans are very cheap to buy and won't require all the pre-soaking that dried beans require and so are very easy to use. They are also a great source of protein and will make this a really filling meal.

Frugal Recipes - Ingredients: (serves 4)

The tins of beans are already cooked and so are ready for use, however if you are using dried beans etc make sure to soak them overnight and cook them until soft.
Finely dice the onion, carrot and pepper
Deseed and dice chilli and crush the garlic.
Place the vegetables, chilli and garlic in a pan with the olive oil and cook them until they begin to soften.
Add the tin tomatoes, herbs, chilli powder and beans (add sufficient
water to make a sauce)
Bring to the boil and then simmer until all vegetables are tender and the sauce is thick. (The beans will break down to become part of the sauce)
Season to taste with black pepper and salt.
This mixture is great to freeze in meal portions.
