This method saves time and money. Knowledge of safely using a pressure cooker is a must.
Clean and sort 1 lb. of pinto beans.
Place beans in a pressure cooker and cover with plenty of water (beans swell during cooking).
Place the lid on the pressure cooker and seal. Heat the pressure cooker until the rocker weight of the pressure cooker begins to rock. Turn off the stove, leave the cooker on the burner, and let the cooker cool on it's own (about 45 min or so).
After the pressure is
completely down (don't rush it), remove the lid and add more water if necessary. Replace the cooker lid and seal.
Reheat the cooker to the point the rocker begins to rock again. Turn off the stove, leave the cooker on the burner, and let the cooker cool on its own again.
When the pressure is
completely down (again, about 45 min), remove the lid and use the cooked beans to make your favorite recipes.
Make variations by adding your favorite ingredients during the cooking process.
