Recipe Name: Easy Cheesy Corn Bread
500g self raising white flour
1 sachet instant dry yeast
300 ml warm water
Half a tin whole corn kernels
1 cup grated cheese
Crushed garlic or garlic paste
Salt, pepper, dried basil or marjoram
50 ml oil
A few slices of onion
Extra flour (just a handful or so)
Despite the long explanation, this really is an easy recipe. You just can't go wrong!
Pour the flour into a large mixing bowl.
With a spoon, make well in the flour and add the dry yeast. Without mixing yet, add a pinch of salt, a good few
dashes of pepper, and a couple of pinches of herbs.
In a measuring jug, best the egg with exactly 300 ml warm
water. Add the oil, stir, and add this to the flour.
Stir with a fork, and when the mixture starts to pull away from the sides, remove from the bowl and place on a floured bread board. flour your hands well and knead the dough lightly until until it comes together nicely.
Bit by bit, add the corn kernels, mixing them into the dough.
Put the dough back into the bowl, cover the bowl with a damp dish cloth, and place in an oven warmer drawer for about twenty- thirty minutes until dough has doubled in size. While waiting for the dough to rise, pre-heat your oven to 190 degrees.
Sprinkle more flour on the bread board. Remove dough from the bowl and pat down to an oval shape. Spread with garlic and most of the grated cheese. Roll up like a swiss roll, and with the help of a spatular, place on a spray & cooked or lightly greased baking tray. Cover the top with onion slices and the remaider of the cheese. Bake for 35 minutes.
Bread is done when you tap the bottom and it makes a hollow sound. Allow to cool for at least twenty minutes before serving.
This bread is just great with any soup or stew.
